Swanson Chicken Giveaway!

Happy President's Day!

Since today is a Holiday, I thought I would kick it off with a fun Giveaway!!

There will be 15 winners and each winner will receive coupons for 5 free cans of Swanson's Chicken!!

How exciting is that? I love Swanson Chicken. I use it to make chicken salad sandwiches, and this great Chicken, Broccoli and Biscuit meal that my mother-in-law handed down to me when I got married. I love easy casseroles for those days I am running all day!

Want a fun recipe to use with your Swanson's Chicken? Thanks to Kaitlin from Entertaining Escapades.

Buffalo Chicken Dip

1 pkg. (8 oz.) cream cheese, softened2 cans (9.75 oz each) Swanson Premium Chunk Chicken Breast, drained½ cup Frank's RedHot Sauce ½ cup blue cheese salad dressing½ cup crumbled blue cheeseAssorted fresh vegetables and/or crackers

Directions:

1) Stir cream cheese in 9" deep dish pie plate until smooth. Stir in remaining ingredients.
2) Bake at 350°F. for 20 min. until hot and bubbling. Stir. Serve with vegetables and crackers.

Tips: - Substitute ranch dressing for blue cheese dressing and shredded cheddar cheese for blue cheese crumbles. - Make it tailgate friendly – prepare ahead of time and transport in a disposable heavy foil pan. When you get to the tailgate heat it on a grill and serve nice and hot! - Make this in the microwave by heating it on high for 5 minutes instead of baking

- Keep it warm in a crockpot or slow cooker

Why else do I love Swansons Chicken? They participate in the Labels for Education program. Yay! On each can, you will find a label to cut off worth 1 point. So, make sure to cut it and give it to your local school. They can earn points to redeem for much needed school equipment, etc. If you don't have a child in school, consider giving it to a neighbor, niece/nephew, grandchild, etc. It is a shame to let those points go to waste.

And, don't forget to sign up for Campbell's e-Label's for Education program, too. If your store participates, your designated school will automatically get the points as soon as you buy the product. Bonus!

We use a lot of canned chicken around our house. We make a dish called Chicken Pasta about once a week. All you do is cook a box of bowtie pasta according to the directions on the box--Drain--Stir in one of the bigger cans of chicken and two jars of Ragu Alfredo sauce and you're done!

My grandmothers Chicken Salad recipe is my absolute favorite! The first time I tasted it, I would have sworn she used fresh chicken! But she let me in on the secret that it was canned...But it MUST be Swanson!

I make a barbecue chicken pizza by using a store-bought pizza crust and covering with Sticky Fingers BBQ sauce, the cooked chicken, and topping with cheddar cheese. You can also add onion and peppers.

My favorite canned chicken recipe is quite easy. It is a fried chicken cake (instead of fried crab cakes since I do not like crab meat). Here is the recipe if you want to try. 1 can of chicken drained, 1/2 cup breadcrumbs, 1 egg, 1-2 scallions cut up, drizzle of grated parmesan cheese - mix together and make small patty size chicken cakes. roll in breadcrumbs (additional on some wax paper). Have a frying pan hot with some EVOO in it, fry on each side and enjoy! Yum!!

Ingredients
1/2 cup diced onions
1/2 cup diced green bell peppers
1 tablespoon minced garlic
Vegetable oil
1 pound chicken breasts, boiled and shredded
1 package taco seasoning mix
1 (8-ounce) jar salsa
1 (14-ounce) can kernel corn
1 (14-ounce) can hominy
1 (16-ounce) can ranch style beans
2 (4-ounce) cans tomato paste
2 (14-ounce) cans chicken broth
1 (8-ounce) package cream cheese
Directions
Saute onions, green bell peppers, and garlic in a small amount of vegetable oil. Add chicken, taco seasoning mix, salsa, vegetables, beans, tomato paste, and chicken broth. Adjust liquid to your liking. Bring to a slow simmer and simmer for 20 minutes. Place cream cheese in a separate bowl. Using a measuring cup, take some of the hot liquid from the soup and pour over cream cheese to melt and then add back to the soup. Simmer on low for another 10 minutes. Serve with tortilla chips and grated Monterey jack cheese.

Also, great on the second day over rice.

My husband's signature dish is Progresso Chicken Noodle soup with an extra can of chicken, a cup of rice, and a can of chicken broth. Sometimes when he's feeling energetic, he'll toss in some extra carrot. And then we top it all off with Parmesan cheese. Simple, but tasty!

I make a recipe called Chicken Crescent Rolls. It mixes canned chicken, cream cheese, milk, salt pepper, green onions and cheddar cheese. All this is wrapped in a crescent roll and baked....mmmmmmm. Yummy! A favorite in my house.

Using canned chicken is so simple. We have about 30 recipes the are great Hot or cold chicken saiad, chicken pot pie, chicken and noodle cassarole, chicken and rice, I use canned chicken in alot of recipes.

I'm a subscriber already (RSS) and my favorite recipe is actually the one you listed. Here is another though that I make with it, usually for parties. It's a old Pampered Chef Recipe:

1 cup mayonnaise
2 tablespoons Dijon mustard
2 tablespoons fresh parsley, snipped
1 tablespoon onion, finely chopped
1 (10 ounce) can Swanson chicken, drained
4 slices bacon, crisply cooked,
1 cup finely shredded swiss cheese
2 (8 ounce) packages refrigerated crescent dinner rolls
1-2 large plum tomatoes, thinly sliced
1 medium red bell pepper
2 cups shredded lettuce

Directions:

1 Preheat oven to 375°F.
2 In a bowl, combine mayonnaise and mustard.
3 Snip parsley.
4 Chop onion.
5 Add parsley and onion to mayonnaise mixture; mix well.
6 In a 2 quart bowl, flake chicken with a fork.
7 Chop bacon.
8 Add bacon, 3/4 cup swiss cheese, and 1/3 cup of the mayonnaise mixture; mix well.
9 Unroll crescent dough, separate into 16 triangles.
10 Arrange triangles in a circle on a 13-inch baking stone with wide ends of triangles overlapping in the center and points toward the outside (there should be a 5-inch diameter opening in the center of the stone).
11 Scoop the chicken mixture evenly onto widest end of each triangle.
12 Bring outside points of triangle up over filling and tuck under wide ends of dough at center or ring (filling will not be completely covered).
13 Slice tomatoes, cut slices in half.
14 Place 1 tomato half over filling between openings of ring.
15 Bake 20 to 25 minutes or until deep golden brown.
16 Remove from oven, immediately sprinkle with remaining 1/4 cup swiss cheese.
17 Using a v-shaped cutter, cut around bell pepper.
18 Separate halves; remove membrane and seeds.
19 Fill with remaining mayonnaise mixture; place in center of ring.
20 Arrange lettuce around the pepper.
